We are delighted to present the NEW range of Everlasting BASIC and PROFESSIONAL Blast Chillers / Freezers.

The BASIC Range, constructed completely from high grade AISI 304 stainless steel, offers a range of Counter Top and Free Standing 4, 5, 7, 10 and 15 trays cabinets complete with core food probe and a controller to support HARD and SOFT chill and freezing cycles.

The PROFESSIONAL Range provides greater chilling and freezing capacity with a range of 5, 7, 10 ,15 and 20 trays cabinets, with the added new multi-function touch screen controller, featuring HACCP data recording, evaporator fan speed control, programmable recipe cycles and the option for humidity management, sterilization with UV lamp and use as a thawing cabinet.

We are now offering a Foster’s Controlled Thawing cabinet for ultimate food safety when bringing food temperatures up from frozen to refrigerated at controlled temperatures from -18/-21ºC to +1/+4ºC. This saves business time whilst maximising product quality.

Designed for a wide range of producers and produce where there is a need to safely chill and freeze hot, ambient and chilled food and drink products whilst maintain aroma, flavour and texture, these cabinets support a multitude of processes.

All our equipment is ideal for cook and chill food production processes and includes a HARD and SOFT chill cycle management and will automatically activate a chill or freeze storage phase at the end of each cycle to give peace of mind. All doors are self-closing with 105° stay open mechanism.

Our advice

Hot food will automatically increase the temperature and moisture inside the cabinet and may also affect the temperature of other food and beverage products being stored in the cabinet. Also, standard commercial refrigeration doesn’t have the power or ventilation to rapidly reduce the temperature of hot food. Putting hot food into a normal commercial fridge or freezer can seriously affect the performance of the refrigerant equipment.

As a rule of thumb, it can take 12-20 times long to reduce the temperature of cooked food in a standard commercial fridge or freezer than in a blast chiller/freezer. If food or equivalent products are not due to be consumed within 2 hours than the temperature of the freshly cooked products should be reduced from +70°C to +3°C in 90 minute and storage in a refrigerator. For frozen storage, the products should be cooled to -18°C within 270 minutes.

It is important to choose blast chiller/freezer with the right chilling capability.
