Hot food will automatically increase the temperature and moisture inside the cabinet and may also affect the temperature of other food and beverage products being stored in the cabinet. Also, standard commercial refrigeration doesn’t have the power or ventilation to rapidly reduce the temperature of hot food. Putting hot food into a normal commercial fridge or freezer can seriously affect the performance of the refrigerant equipment.
As a rule of thumb, it can take 12-20 times long to reduce the temperature of cooked food in a standard commercial fridge or freezer than in a blast chiller/freezer. If food or equivalent products are not due to be consumed within 2 hours than the temperature of the freshly cooked products should be reduced from +70°C to +3°C in 90 minute and storage in a refrigerator. For frozen storage, the products should be cooled to -18°C within 270 minutes.
